You need a custom gateway only when your payment provider has no maintained WooCommerce plugin, or when a provider needs handling that off-the-shelf options do not cover. How does WooCommerce stay PCI compliant when taking cards?

PCI compliance is not automatic and depends on your setup, but the practical safeguard is keeping card data off your own servers. We use gateways and tokenization so card details are handled by the provider rather than stored by you, which reduces your compliance scope. Will my payment methods work with the new block checkout?

They will if they are registered for it. WooCommerce moved to a block-based checkout, and payment methods now have to be registered specifically for the Cart and Checkout blocks. We set up your gateway to work in the block checkout, and can update an older payment integration that only supported the previous shortcode checkout.
